Cups to Grams: Why Baking Recipes Fail in Translation
Ask the internet “how many grams in a cup” and you’ll get a dozen confident, contradictory answers: 125, 128, 240, 236. They’re all correct — for different things. That single confusion ruins more converted recipes than any other kitchen mistake, and it comes down to one fact: a cup measures space, a gram measures weight, and different ingredients pack different amounts of weight into the same space.
Volume vs weight: the core problem
American recipes measure most ingredients by volume: cups, tablespoons, teaspoons. Most of the rest of the world — and every serious baking book — measures by weight: grams. Converting between the two systems isn’t a fixed exchange rate like miles to kilometers. It runs through the ingredient’s density.
A US cup is 236.6 ml of space. Fill it with water and you get about 237 g, because water’s density is 1 g/ml. Fill it with all-purpose flour and you get roughly 125 g, because flour is mostly air pockets between particles. Fill it with honey and you get about 340 g. Same cup, three wildly different weights.

- Butter is the friendly one. US butter sticks are printed with tablespoon markings, and 1 stick = ½ cup = 113 g, so butter converts almost by accident.
